We are overloaded with tomatoes from our garden. It’s a good problem to have! We love bruschetta and decided that we wanted to try a Mexican version.
It was delicious and we loved it! Its almost like a pico de gallo but its eaten on buttered toast.
Here is how we made it:
2 cups tomatoes
2-3 Tbsp. cilantro
1-2 Tbsp. finely diced red onion
1 clove of garlic
Juice of 1 lime
First, dice the tomatoes into small pieces.
Dice your onion very small as well as your garlic and cilantro.
Add everything in with the tomato. Squeeze the lime into the tomatoes mix and stir. I also added a little salt. If you are brave and like it spicy you could also add some jalapeno, but we are wimps in our house!
Butter some thinly sliced French bread and toast in the oven until lightly browned. Serve the tomato mixture over the toast. Garnish with avocado.
Now maybe I won’t mindlessly eat so many chips!
